Staining New Cedar Ceiling Wood on Patio Ceiling

I'm having a a patio remodeled and they are replacing the vinyl ceiling with tongue and groove cedar wood.  Therefore this wood will be covered at all times with no direct sunlight or rain.  The company doing the work will be doing the staining but I have to supply the stain.   I've read not to immediately stain new wood but I won't have that option since the company will do everything at once.  Would it be safe to apply stain to this "new wood"?   If not, should I go with the recommended stains for new wood (e.g. Restore a Deck Wood Stain).   Also since someday I will have to re-stain it, is water based stains easier to reapply later?

New wood for decking should not be stained right away but it really does not matter when it is a ceiling as it will last 5-10 years without issues. You just need a good penetrating stain. Just one coat. Try Armstrong Clark Stain in Natural tone.
