Blotchy wood

Hello!

I am staining a bunch of kiln-dried western red cedar, A or Btr, T&G siding and trim. Per the "what's the best stain" section response (thanks! very helpful!), I used Restore-A-Deck cleaner and brightener and I'm using Defy Extreme stain (2 coats). I have done something wrong because a lot, but not all, of the boards are turning out blotchy. Any advice on where I could have gone wrong would be helpful since I haven't cleaned/brightened/stained all of the boards yet.

It may be that the wood is extremely absorbent. Does the blotchiness go away if you apply water to the area? On that middle board in the top picture, apply water to all of it and see of it looks even/darker when wet. Trying to determine if the wood grain is "white" and not taking the stain or if the wood is so absorbent that you may need another coat to even it out.

Hello!
I just thought I'd follow up in the event someone else has this problem. I cannot remember the results of the water test now, however. We ended up putting more stain on the wood. The additional coats of stain really absorbed into the wood. The photo of the board is a test area of more stain that had dried. The other photo is installed siding after about 5 months. It's still looking great after 10 months.
