New Fence already graying

Hi,

Love the site, so much great information.

We just had a new Fence put in (pressure treated pine frame/posts, with rough cedar horizontal planks).

We are located in Houston, Tx, and the fence gets full sun.

I was planning on letting it sit for a month or two before staining, but the cedar boards are already bending and starting to gray a little. 

I don't know how dried the cedar was before they installed it.

Should I continue to wait (and just assume I'm going to need to sand away the graying a bit to prep) or should I move forward with a stain?
